The 993 dairy has been producing Parmigiano Reggiano since 1929 in the mountain village of Cavola, Reggio Emilia, at nearly 900 metres above sea level. Their cows feed exclusively on locally grown mountain fodder, resulting in a rich, high-quality milk that gives this cheese its exceptional depth of flavour.
